Ingredients (for 6 people):
- 3 eggs
- 3 tbsp of thick natural yogurt
- 10 oz (250 gr) of zucchini
- 3.5 oz (100 gr) of pinenuts
- 1 1/2 cups of flour
- 4 tbsp of olive oil
- 3 tbsp of parsley
- 2 tbsp of chives
- 3/4 teasp of baking powder
- 1 teasp of curry
- 2 teasp of salt
- pepper
Directions:
Preheat the oven to 415°F (210°C).
Grate the zucchinis coarsely.
In a bowl, mix the flour, baking powder, eggs, yogurt, oil, curry, salt and pepper.
Put in the roasted zucchinis, herbs and grilled pinenuts.
Pour this preparation in a buttered and floured cake mould.
Cook for 10 min, then lower the temperature to 350°F (180°C) for 40-45 min.
Take it out of the mould.
Serve warm or cold with a tomato puree with mayonnaise, lemon and chopped black olives.
